You'll mix, fold, shape, and score a full loaf — not watch Jan do it. Every person works their own dough from start to shaped.

Your shaped loaf goes home with you to proof and bake in your own oven — and you'll know exactly what to do with it. Bring a bowl from home, or add the Baker's Kit and carry it in your own banneton. You'll also receive a fresh loaf that we score and bake together in class.

You'll learn to build a sourdough starter from scratch and keep it thriving — the full method, no mysteries. Want a head start? The Baker's Kit (coming soon) includes a living portion of the legendary Crow Bench Farm starter, ready to bake with.

The same recipe she uses every week. No grams memorized — you get a clean printed card with measurements and a day-by-day timeline.

🌿 Lunch from the farm

We eat bread. Jan puts out butter, good cheese, and something from the garden. You'll need it — morning classes run through midday.

Class Schedule

Dates set by demand.

Classes run during the winter months, when the markets slow down, and dates are set by who's interested — there's no fixed calendar. Tell Jan you want a spot and she'll reach out when she's lining up the next group. Classes are $150 per person and run in small groups of six, in her farmhouse kitchen outside Orofino — a full day of baking, lunch from the farm, and two loaves to take home.

No commitment required. Classes are $150 per person — a full day in the farmhouse kitchen, lunch included, two loaves home — and payment is only collected after Jan confirms your spot. She'll follow up directly with dates and details first.
